It begins! The Holiday Season is finally upon us and I am finally on vacation; which means I can spend all my time bringing YOU some of my favourite vegan holiday inspired recipes! For the next twelve days, I’m bringing you a recipe a day, inspired by holiday flavours, and perfect for getting you in the spirit of the season.
All of these recipes will be relatively cheap and easy to make. I want you to be able to celebrate this season with every meal, snack, and treat! So keep your eye on the blog and on my Instagram (@hannaheatsvegan) for the next twelve days to see what I’m cooking/baking up.
WHICH BRINGS US TO TODAY’S RECIPE: Cranberry Gingerbread Oatmeal!
This recipe makes a delicious and nutritious breakfast for any day of the week (but it’s extra perfect for Christmas morning). It requires just a few simple ingredients, and tons of warming gingerbread spices like cinnamon, cloves, nutmeg and of course GINGER. It also features one of my favourite ingredients at the moment–blackstrap molasses. Rich in iron, this amazing product is a great substitute for any of your sweeteners, but especially appropriate for this gingerbread inspired recipe.
Ingredients you’ll need:
- 1/2 cup rolled oats
- 1/2 cup non-dairy milk
- 1/2 cup water
- 1 tsp fresh ginger
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1 tsp maple syrup
- 1 tsp blackstrap molasses
- 1 handful of dried cranberries
- 1 small handful of pecans
Here’s to how make ’em:
- In a small saucepan, combine 1/2 cup of rolled oats and 1/2 cup of each non-dairy milk and water.
- Add all your spices and begin to cook your oats on a medium-low heat.
- Allow your oats to thicken (5-8 minutes), then stir in 3/4 of your cranberries, your maple syrup, and your molasses.
- Once your oats have reached your desired thickness, transfer to a bowl.
- Top with the rest of your dried cranberries and your pecans and an extra sprinkle of cinnamon.
- Enjoy!
There you have it, friends: easy, cheap, and delicious cranberry gingerbread oats! I’ll probably be eating this a lot throughout this season, personally.
