Vegan Peppermint Chocolate Truffles

 

The holidays are the perfect opportunity to over-indulge with chocolate, sweets, and candies. But what if there was a way to do it without feeling like utter trash? Well, look no further than these delicious (and secretly nutritious) no-bake vegan truffles! They can even be made raw but replacing cocoa powder with cacao powder. You’re going to want to try these ones, ya’ll.

These truffles are no-bake, refined sugar free, take no time at all to put together, and contain just FOUR ingredients! Without further ado, let’s get into it:

What you’ll need:

  • 12 soaked medjool dates
  • 1/4 cup chopped walnuts
  • 1/4 cup cocoa or cacao powder
  • 1/4 tsp peppermint extract

Additional toppings (optional):

  • Crushed candy cane bits
  • Red and green sugar sprinkles
  • Cocoa powder

How to make ’em:

  1. Soak your dates in warm water for ten-twenty minutes to soften
  2. Once your dates have softened, add them to a food processor or blender with all other ingredients
  3. Process until a sticky dough-like consistency is achieved
  4. Wet hands slightly (to help with the sticking!) and roll the mixture into 1 inch balls
  5. Place on a plate or cookie sheet lined with parchment paper and chill in the fridge for at least half an hour
  6. Once chilled, decorate your truffles by rolling them cocoa powder, crushed candy cane bits, or red and green sugar sprinkles
  7. Store your decorated truffles in the fridge or simply enjoy immediately!
