These truffles are no-bake, refined sugar free, take no time at all to put together, and contain just FOUR ingredients! Without further ado, let’s get into it:
What you’ll need:
- 12 soaked medjool dates
- 1/4 cup chopped walnuts
- 1/4 cup cocoa or cacao powder
- 1/4 tsp peppermint extract
Additional toppings (optional):
- Crushed candy cane bits
- Red and green sugar sprinkles
- Cocoa powder
How to make ’em:
- Soak your dates in warm water for ten-twenty minutes to soften
- Once your dates have softened, add them to a food processor or blender with all other ingredients
- Process until a sticky dough-like consistency is achieved
- Wet hands slightly (to help with the sticking!) and roll the mixture into 1 inch balls
- Place on a plate or cookie sheet lined with parchment paper and chill in the fridge for at least half an hour
- Once chilled, decorate your truffles by rolling them cocoa powder, crushed candy cane bits, or red and green sugar sprinkles
- Store your decorated truffles in the fridge or simply enjoy immediately!
